Ingredients
3 cups frozen shredded hash browns, thawed
4 tablespoons butter, melted
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
3 large eggs
1/2 cup milk
1 cup diced fully cooked ham
4 ounces Medium Cheddar cheese, shredded (1 cup)
4 ounces Swiss cheese, shredded (1 cup)
1/4 cup finely chopped green pepper
Instructions
1 Heat oven to 425°F. Coat a 10-inch ovenproof skillet or deep-dish pie plate with nonstick cooking spray.
2 Combine the hash browns, butter, salt and pepper in a large bowl.
3 Press hash browns mixture into the bottom and up the sides of skillet. Bake for 25 minutes; remove from oven.
4 Reduce heat to 350°F. Meanwhile, whisk eggs and milk in a small bowl. Combine the ham, cheddar, swiss and green pepper in large bowl.
5 Pour egg mixture over crust; sprinkle with ham mixture. Bake for 25-30 minutes longer or until a thermometer inserted near the center reads 160°F.
6 Let stand for 10 minutes before serving.
